Grape variety: Pinot noir
Its color is purple and shiny, then its bouquet is divided between floral (violet, peony), fruity (blackcurrant, morello cherry, quince), animal, musky and peppery aromas. It presents a round attack, to develop a beautiful structure. Its aging lasts approximately 24 months, part in barrel and the other one in vat, in order to find the right balance.
A tannic structure that appeals to beautiful cuts of meat, such as braised pork, well-marbled entrecôte, poultry stews and its curry or tandoori variants. The delicacy of its aromas and its finish also predestines it for more creative pairings with paella, tapas or spring rolls.
Often associated with an image of “winter wine”, and depending on your tastes, it can also be forgotten in the cellar.
